1 Stir-fry Blend:
time : 5 mins    Makes: approximately 1/4 cup
Combine:
2 tablespoons ground almonds with 1 tablespoon cinnamon, 1 teaspoon ground cloves, 1 teaspoon ground chilli and 1/2 teaspoon each ground cardamon and nutmeg. Spoon into small jars, seal immediately
2 Cinnamon and Cardamon Sugar:
time: 5 mins   Makes: approximately 1/4 cup
Combine:
2 tablespoons ground cinnamon with 1/3 cup castor sugar, add 1 teaspoon freshly ground cardamon and mix well. Store in an airtight jar
3 Spiced Salt:
time: 10 mins   Makes: approximately 1 1/2 cups
Combine:
1 1/4 cups sea salt flakes, 2 tablespoons cracked black pepper, 1/4 teaspoon ground cloves, 1/4 teaspoon ground nutmeg, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cinnamon. Spoon into small jars, seal jars immediately
4 Chinese Spice Powder:
time: 10 mins    Makes: approximately 1 cup
Combine:
2 tablespoons ground black pepper, 1 tablespoon ground anise, 1/3 cup ground cinnamon, 2 tablespoon ground cloves, 2 teaspoon ground chilli and 1 teaspoon allspice. Spoon into small jars, seal immediately.
5 Cake Spice:
time: 5 mins   Makes: approximately 1/4 cup
Combine:
2 tablespoon castor sugar with 2 tablespoon nutmeg, 2 teaspoons cinnamon, 1 teaspoon mixed spice, and the seeds from a vanilla bean. Mix well and store mixture in a jar
Herb and Spice Guide:
Basil
Sweet Basil and Red Basil
Available in 3 types – sweet basil, bush basil and red basil. All are good for tomato-based sauces, pesto and paste. red basil is used for Thai- style dishes
Cinnamon
Cinnamon sticks are most commonly used for syrups, fruit dishes and pickling liquids. Use ground cinnamon for a stronger flavor in cakes, desserts, and some savory dishes.
Garlic
Use fresh garlic for pesto, aioli, garlic bread, pasta and stir-fries. Store bulbs in an airy place. to make a crushing fresh garlic easy, sprinkle with salt and crush with a back of a knife.
Nutmeg
Nutmeg can be used freshly grated from the kernel directly into soups, cakes, desserts, salads and cream sauces. It is available ground but quickly loses its flavor in this form
Oregano
A strong flavored herb similar to marjoram, used mostly in Greek and Mediterranean- style cookery. It teams well this pasta, rise, eggplant and zucchini.
Parsley
Curley Parsley and Italian Parsley
Both Italian and curly parsley are readily available. Italian parsley has a stronger flavor and is good for more robust dishes. Curly parsley is more universal and goes with soups, salads, sauces, fish dishes and casseroles.
Rosemary
Rosemary imparts a warm and savory flavor to meats, scones, breads and damper. Dried rosemary is good substitute for the dried variety.
Thyme
