2 Shallots (peeled)
3 Garlic cloves (peeled)
2 Red Chillies (deseeded & chopped)
1 tsp Fennel seeds
1 tsp Cumin
1 tsp Lemon juice
60 ml Yogurt
900 g lamb shoulder (cut into cubes)
45 ml oil (preferably olive oil)
1 small bunch Cilantro (coriander)
METHOD:
Place the garlic, shallot, chili. coriander, cumin, fennel, oil, lemon juice and yogurt into a food processor. Blend until a paste is formed.
Place the lamb cubes in a bowl, mix in paste and set aside to marinate for 2 hours
Thread the lamb cubes onto metal skewers. Cook for 6 minutes on a grill or barbecue, turning frequently.
